Our on-field inspector checks every farm we work with to be sure farmers are using only natural fertilizers, harvesting only ripe (8-9 months old) beans, selects beans before shipping, so only the best ones go to our drying station on West Borneo (Kalimantan Barat province of Indonesia).

At the drying station, we check and sort beans by size to be sure we treat every bean in the best way. We don't look how to cut the way and focused only on the quality. Our experience allowed us to enhance the Bourbon curing technique to keep all content (seeds and aromatic oils) even in split beans. For sunbathing and conditioning, we lay out beans neatly, in one layer with a space between each bean to be sure that every bean is exposed to sunlight and ventilated very well.
